Yule Log

Ingredients For Flourless Cake:

7 ea. egg whites
1 cup + 2 Tbsp.sugar
8 ea. egg yolks
1/4 cup sifted cocoa powder

Method

1. Using an electric mixer with wire whisk, whip egg whites with the sugar untill stiff peak forms.
2. Whip yolks untill light and fluffy. They will be pale yellow. Approximately 2 times in volume.
3. Fold whipped whites into yolks, then fold in sifted cocoa powder.
4. Place parchment paper on half sheet pan and spray with cooking spray.
5. Smooth mix evenly on half sheet pan.
6. Bake at 350 for 10-12 min. until sponge springs back when lightly touched.

Ingredients For Chocolate Mousse:

3 1/4 cup cream
2 1/4 cup dark chocolate 58%
1/4 cup sugar
1/8 cup water
6 ea. egg yolks

Method

1. Using an electric mixer with wire whisk, whip cream to medium peak. Set aside.
2. Start melting chocolate in a double boiler. 
3. Put sugar and water in a pot and mix together and heat to 121°C.
4. Clean sides of pot with wet pastry brush.
5. Start whipping yolks at high speed.
6. Turn down speed on mixer to medium and slowly add sugar down side of the mixing bowl. Mix untill yolks are warm and not hot.
7. Make sure chocolate is completely melted and hot to the touch. Then fold into whipped cream. 
8. Fold in yolks.

When sponge has cooled remove from pan and remove parchment paper from back of sponge. Place on top of new piece of parchment paper to build yule log.

Spread a smooth, thin layer of chocolate mousse over sponge. Then roll sponge into a log.  Move the log to a sheet pan lined with parchment paper. Then place in the cooler to let mousse set up. Also place all leftover mousse in cooler as this will be the icing for the outside of the log.

When mousse has set up and roll is firm, remove from cooler and cut off ends. Then make another cut on one side to remove a small piece to use as a decorative piece to the yule log.

Place cut piece on the side or on top of the yule log.  Place extra mousse into a pipping bag with a star tip. Pipe strips of the mousse along the yule log and on additional piece. If additional piece is on top pipe going up.
